Apple and Lemongrass Cider
Red and green cocktail for Christmas. Alcoholic or not, this Apple & Lemongrass Cider will be a favourite around the table this Christmas!
Ingredients:
1 red apple
1 green apple
4 cups ice
460ml iced tea
370ml apple cider (alcoholic or non alcoholic)
1 stick trimmed lemongrass
Optional: 2 tbsp ginger wine
SERVES: 4 PREP: 5 minutes
Method
Thinly slice your apples to a ribbon thickness. Place a third of them in the bottom of each glass you’re topping up. Fill up to half way with ice.
Add in (almost) all of your apples above the ice, then more ice to create a layered effect. Top the glass with remaining apple slices.
Pour in your optional ginger wine, followed by iced tea and cider, distributing evenly in each glass. Split your lemongrass stick four ways, crushing slightly with the back of a knife to release a lovely lemongrass smell. Add lemongrass to your glasses and enjoy.
