Apple Salad with Raspberry Dressing
Nothing says festive season like a beautiful red and green salad! This Apple Salad with Raspberry Dressing is a refreshing salad to brighten up the table this Christmas!
Ingredients
½ cup roasted hazelnuts
100g fresh raspberries
2 tbsp red wine vinegar
2 tsp Dijon mustard
2 tsp honey
¼ cup olive oil
Salt and pepper, to taste
3 Granny Smith apples, thinly sliced
120g rocket leaves
100g goat's cheese, crumbled
Method
In a small bowl, mash half of the raspberries with a fork.
Next, add the vinegar, mustard, honey, and olive oil. Whisk to combine. Taste and season generously with salt and pepper.
To serve, arrange the rocket, apple slices, and remaining raspberries on a large platter. Sprinkle with the roasted hazelnuts and goat’s cheese, then drizzle over the raspberry dressing.
