Banana Chocolate Chip Muffins
A match made in heaven! Bananas and chocolate..you can’t go wrong!
Ingredients
2 cups self-raising flour
1/2 cup caster sugar
1/2 cup milk
2 eggs
60g butter, melted
2 ripe bananas, mashed
1 banana thinly sliced for decoration on top
1 cup chocolate chips
Icing sugar to dust
Method
Preheat your oven to 200C or 180C fan-forced. Grease and line a muffin tray with paper muffin cases.
Melt butter in a small heat-proof bowl or cup in the microwave for 30 seconds. Set aside to cool slightly.
Sift flour into a mixing bowl and stir in sugar. Make a well in the center of the dry ingredients for the wet ingredients.
Beat the egg in a cup and add to the dry ingredients along with milk and butter along with the mashed banana. Using a wooden spoon, gently fold the ingredients until just combined. Stir in chocolate chips. Don't stir too much or the muffins will be tough.
Spoon the mixture evenly into the muffin cases. Tip** use two spoons to spoon mixture into cases, using the second spoon to scrape mixture off the other spoon.
Bake for 20 minutes or until center is cooked thoroughly. Use a knife to check and when it comes out clean they are done.
Set aside muffins onto a wire rack to cool for 3 minutes and enjoy!
