Cherry Tomato Tart with Fresh Basil

This Cherry Tomato Tart is the perfect way to serve up your supper!
With a puff pastry base and a generous handful of Basil, this cheese-filled Tart is simply too good to be true!

Ingredients:

  • 2 punnets of Cherry Tomatoes

  • 300g fresh mozzarella

  • Handful of Basil

  • Pecorino Romano (substitute is Parmesan cheese)

  • 1 tablespoon of Oregano

  • Salt & Pepper

Method

  1. Preheat oven to 180 degrees

  2. Defrost pastry sheets

  3. Wash and cut cherry tomatoes

  4. Add pastry to greased tart/pie tin, covering the edges and cutting off any excess

  5. Poke holes in the pastry with a fork

  6. Cook for 10 minutes in the oven

  7. Grate the fresh mozzarella

  8. Layer the mozzarella and cherry tomatoes onto the pastry. Grate pecorino romano over the top and season with salt and pepper and oregano.

  9. Cook for a further 15 minutes or so in the oven until the cheese is melted and the pastry is cooked through

  10. Serve with fresh basil
