Healthy Chicken Nachos
It’s nacho night! We can guarantee these Healthy Chicken Nachos will be a hit with the whole family!
Ingredients:
¾ pack of corn chips
¾ cup grated cheese
1-2 chicken breasts, cooked and shredded with a fork
2 tomatoes, diced
½ spanish onion, thinly sliced
½ can black beans, drained
1 small can of corn
Jalapeno, sliced (optional)
Sour cream, to serve
Guacamole, to serve
Serves: 4 | Prep: 15 Minutes
Method
Pre-heat grill oven.
Spread corn chips evenly in an oven proof dish. Sprinkle half of the cheese over the corn chips.
Evenly spread remaining ingredients on top; chicken, tomatoes, red onion, black beans and corn.
Place under grill for a few minutes or until the cheese is melted.
Take out of oven. Top with sliced jalapeno if desired. Serve with sour cream and guacamole.
