And no, we aren’t talking about having a big bowl of steamed broccoli for breakfast. Consuming vegetables in every meal can be delicious and fun to experiment with!

Add greens to your toast

Sautee some kale or spinach and add to your toast along with smashed avocado and grilled asparagus. Add some poached or scrambled eggs and you have a delicious breakfast with healthy greens!

Omelettes

These are a great way to add veggies in. You can experiment with many different options of vegetables. Some of our favourites in omelettes are mushrooms, spinach, capsicum, eschallots, tomatoes, corn, avocado, parsley, chives and chilli.

Juices

Fresh juices are just the best! Juices are great, because you mask the veg with the sweetness of fruit, by still getting your daily intake of veg. Include things like kale, spinach, carrots, celery, parsley, ginger and beetroot for a great looking and tasting juice!

Fry Up

Sometimes, it gets to the end of the week and you have a little bit of everything left in your fridge that needs using so why not chuck everything into a fry pan cook it all up! Add some eggs and toast and you’ve got yourself a great, veggie-packed breakfast and added bonus - you aren’t wasting your fresh produce.

Big Breakfast

We know everyone loves a big breakfast when you go out to a cafe, you can create your own big healthy breakfast at home! Use vegetables such as oven roasted cherry tomatoes - drizzle with olive oil and rosemary, flat mushrooms which can be stuffed, sliced avocado, sautéed spinach, fresh watercress or rocket - washed and roughly torn, grilled tomatoes & capsicum - be sure to season with salt & pepper. You can even make your own healthy homemade hash browns! Add wholemeal toast and eggs and there you have it, a delicious vegetable packed big breakfast.
