Lemon Mug Cake

Ingredients:
20 g butter, melted and cooled
1 egg
1 tsp lemon zest + extra to serve
¼ cup plain flour
1 tbsp almond meal
1 tsp stevia/sweetener of your choice
½ tsp baking powder
2 tbsp freshly squeezed lemon juice
2 tbsp milk
1 dollop of cream, to serve
Serves 1
Method
In a small bowl, whisk together the butter, egg, and lemon zest until well combined.
Next, add the flour, almond meal, stevia, baking powder, milk, and lemon juice, stirring to combine.
Transfer mixture to a 250ml microwavable mug or cup. Microwave on high for 2 mins, then set aside for 30 secs to cool slightly.
Top with a dollop of cream and extra lemon zest, to serve.
