Passionfruit Parfait
Passionfruit lovers, do we have a treat for you! These passionfruit parfaits are not only a sight for sore eyes…they’re healthy and delicious too! Whether you want to eat one for dessert, breakfast or as an afternoon, your tummy will no doubt be happy about it! This recipe uses coconut yoghurt as a dairy-free alternative, but feel free to use Greek yoghurt or vanilla yoghurt instead.
Ingredients:
4 fresh passionfruits
2 egg whites
1/4 cup caster sugar
300g coconut yoghurt (or low-fat vanilla yoghurt)
Serves: 4 | Prep Time: 20 Minutes
Method
Halve each passionfruit and scoop out pulp into a small bowl.
Beat egg whites until soft peaks form. Gradually add caster sugar and beat until stiff. Fold into yoghurt until smooth.
Spoon some of the yoghurt mixture into each serving glass, then top with some of the passionfruit
Serve and enjoy!
