Rainbow Slaw

We’re always told to eat the rainbow so we’ve created this Rainbow Slaw to help you do so easily! 🌈 Made with fresh Cabbage, Capsicum, Carrot and Spring Onion, you’ll be fuelling your body with so much healthy veg!

Ingredients:

  • 1/3 wombok, finely shredded

  • ½ red capsicum, thinly sliced

  • ½ yellow capsicum, thinly sliced

  • 1 medium carrot, grated

  • 3 green onions, thinly sliced diagonally + extra to serve

  • ¼ cup tahini

  • 1 tbsp rice wine vinegar

  • ½ cup orange juice

Method

  1. Combine wombok, capsicum, carrot, green onion, and sunflower seeds in a large bowl.

  2. To make the dressing, whisk together the tahini, vinegar, and orange juice in a small bowl. Season with salt and pepper, to taste.

  3. Add the dressing to the slaw mixture, tossing to combine. Serve immediately.
