Sarah’s Bruschetta

This makes for the perfect entrée that is deliciously fresh and mouth watering!

 Ingredients

  • Pizza Bruschettina or Ciabatta Bread (Toasted) from Woolworths

  • Raybek Basil Pesto

  • Watercress

  • Cherry Tomatoes, diced

  • Red onion, finely diced

  • Marinated Goats Cheese

  • Balsamic Glaze

  • Salt & Pepper

Method

  • Dice up red onion, cherry tomatoes & watercress. Toss through in a bowl with salt & pepper and a tablespoon of oil from the marinated goats cheese.

  • Toast your bread and set aside.

  • Spread the basil pesto onto the toasted bread, top with cherry tomato & onion mix.

  • Break up small pieces of goats cheese and sprinkle over the top.

  • Drizzle with balsamic glaze & enjoy!
