Megan’s Strawberry Muffins

Strawberry Muffins

These muffins make a wonderful breakfast treat or snack. They are super moist and flavorful and the strawberries add lots of natural sweetness.

Ingredients

  • 2 cups of chopped fresh strawberries

  • 1 cup of white sugar (depending on how sweet you want the muffins)

  • 2 & 1/2 cups of self raising flour - sifted

  • 250g of butter not margarine - melted and cooled a little

  • 4 eggs, lightly beaten

Method

  1. Pre heat oven to 180 - 200 degrees your oven needs to be hot so the muffins cook quickly.

  2. Line two muffin trays with papers and set aside.

  3. In a mixing bowl place 2 cups of chopped strawberries, sugar and self raising flour and mix through..

  4. In a separate bowl, lightly beat 4 eggs. Add eggs and butter together and stir.

  5. Add the butter and egg mixture into your dry ingredients bowl, mix quickly and lightly until they just come together.

  6. Three-quarter fill the muffins papers with the mixture and place into the oven. Cook for 12 to 15 minutes or until golden and spring back when touched. Best eaten on the same day or refresh in the microwave until warmed through.

Note: Secret of these muffins is to have everything ready to go into the oven as soon as you have mixed them 👍🏼

Mix quickly and lightly until just brought together.
