Sweet Potato Fritters
Okay, it’s Friday and you’ve run out of easy snack ideas. Don’t worry, we’ve got you covered! Try out these delicious Sweet Potato Fritters today. They’re super simple, delicious and only take around 10 minutes to prepare.
Ingredients:
3 Large Sweet Potatoes Peeled and Grated
2 Large Eggs
3/4 drained finely chopped kimchi
1/2 cup all-purpose flour
1 tsp. salt
1 tsp. ground black pepper
Vegetable oil (for frying; about 1 cup
½ cup plain Greek yoghurt
1 tbsp. Sweet chilli sauce
Serves: 4 | Prep Time: 10 Minutes
Method
Grate the sweet potatoes into a bowl. Transfer to a clean kitchen towel or layers of paper towels. Gather ends of towel and squeeze over a large bowl to wring out as much liquid as possible. Wipe out bowl and place sweet potatoes, eggs, kimchi, flour, and salt and pepper into the bowl. Mix batter with a fork to combine.
Pour oil into a large frypan and heat over medium-high until bubbling. Place heaped spoonful’s of batter into the frypan, without crowding the pan too much. Using a heatproof spatula, gently flatten fritters. Cook until undersides are browned and crisp, which will take about 2 minutes. Turn over and cook until browned and crisp on the other side, about 2 minutes.
Transfer fritters to paper towels to dry (Tip**Place fritters in oven to keep warm while you cook the remaining fritters)
Mix yoghurt and sweet chilli sauce in a small bowl, season with salt. Transfer fritters to a platter and serve with yoghurt for dipping.
