Sautéed Brussels Sprouts with Bacon, Garlic & Onions
A recipe for the fussy eater who doesn’t like Brussels Sprouts! These bad boys cooked in bacon fat and chicken broth will change your mind about them.. We guarantee you will like Brussels Sprouts after trying them this way! This recipe uses only a handful of ingredients and takes 15 minutes..
Ingredients
6 Slices of Bacon, diced
1 Small Onion, sliced
650g Brussels Sprouts, trimmed and cut in half (or shredded if you prefer)
6 garlic cloves, thinly sliced
3/4 Cup Salt Reduced Chicken Broth
Olive Oil
Salt & Pepper
Optional - Chilli & Chives
Method
Heat a large nonstick pan over medium-high heat. Add diced bacon and sauté for 5 minutes or until bacon is cooked. Remove the pan from the heat, remove the bacon from pan and place onto a plate lined with paper towels to absorb excess oil. Using the same pan without cleaning it, tip out the bacon fat and reserve it aside in a cup.
Return the pan to medium-high heat, add 1 tablespoon of bacon fat and stir in onions and garlic, sauté for 4 minutes or until garlic and onions begins to brown, stirring frequently. Remove from pan and set aside with the bacon.
Add in an additional 1 tablespoon of bacon fat to pan and add Brussels Sprouts and sauté for approx 8 minutes.
Add the chicken broth, and bring to a boil. Cook for 2 minutes or until the broth mostly evaporates and the sprouts are crisp-tender, stirring occasionally.
Stir in salt, pepper, garlic, onions & bacon. Stir through for 1 minute and take off heat.
Serve whilst warm – they’re best this way!
NOTE** Before trimming, I recommend washing your Brussels sprouts to remove any dirt.
To Trim: Use a knife to cut off the tough stem end of each Brussels sprout. Then, remove any yellow or damaged leaves, and cut each Brussels sprout in half lengthwise, from tip to trimmed end.
