Ingredients
2 large brushed potatoes
1 brown onion
2 tablespoons plain flour
olive oil
2 large eggs
salt and freshly ground black pepper
Method
Wash potatoes thoroughly; using a cheese grater, grate potatoes keeping the skin on - no need to peel. Set aside.
Peel the onion and finely dice and set aside with potatoes.
Place the potato and onion to a bowl lined with a clean tea towel. Gather up the edges of the tea towel, twist, then squeeze out as much excess liquid as you can.
Transfer the potatoes and onion into a mixing bowl, add the flour and season well with salt and pepper stir through.
Crack an egg into your mixing bowl and mix well - until the egg is fully combined.
Place a large non-stick frying pan onto medium-high heat, once the pan is hot, add some olive oil and spoonfuls of the mixture into the pan, being careful not to overcrowd the pan.
Cook your hash browns for 10 minutes without moving, until a golden crust has formed, then turn each one.
Continue to cook until golden brown and cooked through, then transfer to a plate lined with paper towels to drain before serving up
Season again with salt and serve!
