Pizza Cauliflower Bake

This Cauliflower Pizza Bake is the perfect hump day meal. It’s a one pan dish that comes together incredibly easily and features delicious Cauliflower and Roma Tomatoes from your local Fruit and Veg shop!

Ingredients:

  • 300g tempeh (or tofu)

  • 1 cup vegetable stock

  • 2 tsp Italian seasoning

  • 1 ½ tsp tamari (or soy sauce)

  • 1 large cauliflower, cut into florets

  • 4 large Roma tomatoes

  • 2 cups marinara sauce

  • 2 cups mozzarella cheese, grated

Serves: 6 | Prep & Cook Time: 50 Minutes

Method

  1. Preheat the oven to 190°C and line a large tray with baking paper.

  2. In a small pot, place the tempeh, stock, tamari and Italian seasoning over a medium-high heat. Bring to boil, then reduce heat and allow tempeh to simmer for 10 mins or until the stock is absorbed. Set aside to cool slightly.

  3. Place cauliflower and chopped tomatoes onto the lined tray, then sprinkle over the tempeh, crumbling as you go. Pour over the marinara sauce and sprinkle over the cheese. Bake for 40-45 mins or until the cauliflower is very tender.

  4. Serve on a bed of rice or pasta, and enjoy.
