Chai Sweet Potato Hotcakes

Ingredients:

3/4 cup mashed, cooked sweet potato
1 cup milk, plus more if necessary
1 egg, lightly beaten
1 tbs olive oil
1 tbs pure maple syrup
2 tsp vanilla paste
1 cup plain flour
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp cardamom
1/4 tsp ginger
pinch of cloves

SERVES: 4

Method

1. In a bowl, whisk together flour, baking powder, salt, and spices.
2. In another bowl, combine milk, egg, oil, maple syrup, vanilla, and mashed sweet potato until smooth.
3. Add wet ingredients to dry ingredients and mix until just combined – The batter will be thick, however, if it is way too thick
4. Add in a tablespoon or two of milk
5. Lightly coat a large nonstick fry pan
6. Drop batter into the pan
7. Cook until bubbles appear on top, about 2 minutes. Flip cakes and cook until golden brown on the underside, 2 minutes.
8. Wipe the skillet clean and repeat with more oil and the remaining batter. You may need to reduce heat to medium-low on the pan to prevent burning
9. To serve – mix maple & cinnamon together
10. Add butter & pour over the maple
11. Sprinkle with pistachios & rose petals and a little zest of lemon
