Avocado & Chicken Brioche Rolls

These chicken and avocado brioche rolls will be your next addiction! PLUS they’re perfect to share with the whole family!

Ingredients

  • 6 brioche hotdog rolls

  • 2 cups shredded rotisserie chicken

  • 1 Hass Avocado

  • 1 tbsp (heaped) whole egg mayonnaise

  • 1 tbsp sour cream

  • ½ cup diced celery

  • ½ cup diced red onion

  • ¼ cup chopped chives

  • Juice of one lemon

  • Pinch of salt + lots of cracked black pepper

  • Lettuce to serve

Method

  1. Prepare your filling. Dice your celery & onion, add it to your shredded chicken.

  2. Half your avocado, carefully score into a criss-cross pattern then use a spoon to scoop out the avocado flesh. Add to the chicken.

  3. Add your sour cream & mayo along with the chives, salt, pepper & lemon juice. Set aside.

  4. Cut your brioche rolls topside to create an opening & butter them. Toast slightly in a dry pan.

  5. Fill with lettuce, spoon in the creamy avocado chicken mixture.

  6. Serve with more sliced avocado.
