Mexican Loaded Sweet Potato

A tasty and easy weeknight dinner idea!

Ingredients

  • 🔸 2 large sweet potatoes, split in half lengthways 
    🔸 1 tsp ground cumin
    🔸 1 tsp smoked paprika
    🔸 1 tsp salt

    To serve 

    🔸 100g grated cheese
    🔸 1 small pkt corn chips

    Sour cream

    🔸 2 tbs chipotle in adobo sauce, chopped fine
    🔸 2 jalapeños, finely sliced 
    🔸Coriander leaves

    Pico de gallo 

    🔸 1/2 red capsicum, deseeded & diced into 1cm cubes 
    🔸 1 small tomato, deseeded & diced
    🔸 1/2 red onion, finely diced 
    🔸 Juice of 1/2 lime 
    🔸 125g tin black beans, rinsed, drained – on

Method

  1. Preheat oven to 200 degrees c

  2. On roasting trays add sweet potato, cumin, paprika & salt – cover with oil & place in oven to roast until all super soft

  3. Remove from oven & scoop out soft sweet potato flesh

  4. Cut up & mix all pic de gallo ingredients together – add to sweet potato flesh stir well – scoop back into shells

  5. Top with cheese & add to oven to melt

  6. Mix together sour cream & adobo well

  7. Serve topped with sour cream adobo mix, coriander, jalapeños & corn chips
